Meal Ideas for Two

Cooking for two can be a lot more difficult than one would suspect. No one could blame you for being tired of quickie dinners such as grilled cheese sandwiches or hamburger helper, but cooking from scratch often results in leftovers—leftovers that can sometimes take days for two people to finish off! This article contains a few recipes that will help you plan a delicious homemade meal for two.

Mango Chicken Curry

1/2 lb cubed skinless, boneless chicken breast
1 mango, peeled and cubed
1 tbsp vegetable oil
1/2 cup chicken stock
1 tbsp cider vinegar
1 tbsp soy sauce
1 1/2 tablespoons brown sugar
1 tbsp cornstarch
1 tsp curry powder
1 red bell pepper, sliced
1 green bell pepper, sliced
1/2 onion, diced
2 tsp minced ginger root

Pour the vegetable oil into a large skillet and heat over a medium-high heat. When the oil is hot, add the chicken and cook thoroughly, then remove to a plate or bowl for later. In a large bowl, whisk together the vinegar, soy sauce, chicken stock, cornstarch, brown sugar, and curry powder. Mix well, then set aside for later. In the skillet, sauté the onion until softened, then add the green and red peppers. After about 2 minutes, add the ginger and cook for an additional minute. Pour the chicken stock mixture into the skillet, as well as the chicken. Simmer until the liquid thickens. Just before removing from the heat, add the mango and allow it to warm through. Serve with plain rice.

Quesadillas

4 (8-inch) flour tortillas
1/2 cup grated cheese
1/4 cup sliced jalapeno peppers (about 12 - 16 slices)
1/2 can refried beans
salsa and sour cream to taste

Grab two microwaveable plates and put a tortilla on each. Divide the beans between each tortilla, spreading it over the full tortilla. Add jalapenos and sprinkle with cheese. Cover each with another tortilla and microwave (one at a time!) for about 30 seconds. Flip it over and microwave for an additional 45 seconds. Slice pie-style and serve with salsa and sour cream.

Beef Stroganoff

1/2 lb lean round steak sliced into thin strips
1/2 cup sliced mushrooms
1/2 cup chopped onion
1 tbsp oil
2 tbsp flour
1 tsp paprika
1 tsp crushed garlic
1 beef bouillon cube
1 cup sour cream

Place flour and paprika in a Ziploc bag and shake to mix. Add the steaks to the flour mixture and shake to coat the steak strips well. Put the oil in a skillet and bring to a medium heat. Toss in the beef strips, onion, and garlic, and cook until the beef coating is brown. Add the mushrooms, bouillon, and sour cream. Allow the mixture to boil, but stir it continuously. Once the sauce has begun to boil, reduce the heat and allow it to simmer for about 15 minutes, until sauce has thickened.
