One of my favorite meals to cook for the family is pasta. It's relatively cheap, easy to make, and can easily serve a handful of people. If you haven't had much experience in making something other than spaghetti, then you might very well be missing out on a potential favorite dish! This article features a few great pasta recipes that both the cooking novice and pro can accomplish and appreciate. They're oh-so-tasty and I hope you enjoy them!
Chicken and Broccoli Fettuccine Alfredo
Ingredients: 6 chicken breast halves cut into cubes 1 lb fettuccine pasta 3/4 cup grated Parmesan cheese 8 ounces shredded Colby-Monterey Jack cheese 1/2 cup sour cream 1 cup half-and-half 3 cups milk 4 cloves garlic, divided and minced 6 tbsp butter, divided 1 tbsp Italian seasoning 1/3 cup flour 1 tbsp salt 3/4 tsp ground white pepper
Directions: Throw 2 tablespoons of butter in a skillet over a medium heat. Add the chicken, Italian seasoning, and garlic. Cook until the chicken is white all the way through. Remove from the skillet and set aside for later. Bring a large pot of water to a boil and add the fettuccine pasta. Cook for about 10 minutes, then drain. Melt 4 tablespoons of butter in the skillet and sauté 2 tablespoons of garlic. Stir in the flour, pepper, and salt and cook for about 2 minutes. Slowly add in the milk and half and half, but be sure to stir constantly. When the sauce turns smooth, add the Parmesan and Colby-Monterey Jack cheeses. Stir until all cheese is melted, then add the chicken mixture and sour cream. Stir well and serve over the fettuccine noodles.
Angel Hair Pasta with Chicken
Ingredients: 1 pound angel hair pasta 6 chicken breast halves 1 package dry Italian salad dressing mix 1 can condensed golden mushroom soup 4 oz cream cheese with chives 1/2 cup white wine 1/4 cup butter
Directions: In a sauce pan, melt the butter over a low heat, then stir in the dressing mix. Add the wine and golden mushroom soup, then stir well. Mix in the cream cheese. Let this mixture heat thoroughly, but be careful not to let it boil. Arrange the chicken breasts in a baking dish and pour the sauce over them. Bake at 325 degrees F for about an hour. About half an hour before the chicken is done, bring a large pot of water to a boil and cook the pasta noodles for about 10 minutes. Drain the noodles and cube the chicken. Serve the chicken on top of the noodles and top with the excess sauce.
Tuna Tetrazzini
Ingredients: 1 package spaghetti noodles 3 cans of tuna in brine, drained 1/4 cup flour 2 cups milk 1/4 cup sherry 1/4 cup mayonnaise 1/4 cup grated Parmesan cheese 2 tbsp butter 1 onion, chopped 8 oz fresh mushrooms, sliced 1 tsp salt
Directions: Bring a large pot of water to boil and add the spaghetti noodles. Cook for about 10 minutes, or until al dente. Drain the noodles. Melt the butter in a sauce pan over medium-low heat, then add the onion and sauté until the onion turns soft, then add the tuna and mushrooms. Cook for about 3 or 4 minutes. Remove the tuna mixture from the heat and set aside in a large bowl. In a separate sauce pan, combie the flour, milk, mayonnaise, sherry, and salt. Mix well and heat until the sauce thickens. Pour the sauce into the bowl with the tuna. Mix well, then add the noodles. When the noodles are fully coated with sauce, transfer the mixture to a casserole dish. Sprinkle parmesan cheese on top and bake at 350 degrees F for half an hour.
Shrimp Scampi
Ingredients: 1 1/2 lbs medium shrimp, peeled and deveined 1 package spaghetti noodles 1 tbsp minced garlic 1/4 cup olive oil 3 tbsp chopped fresh parsley 1/4 cup lemon juice ground black pepper to taste
Directions: In a large bowl, mix together the lemon juice, olive oil, black pepper, garlic, and parsley. Add the shrimp to the mixture and toss it around until the shrimp is well coated. Marinate in the refrigerator for half an hour. Bring a large pot of water to a boil and cook the spaghetti noodles for about 10 minutes, or until al dente. Preheat the grill at a high heat setting. Add the shrimp to skewers and grill for about 3 minutes on each side, or until thoroughly cooked. You might want to oil the grate slightly to prevent the shrimp from sticking. Serve the shrimp on top of the noodles and drizzle just a bit of the remaining marinade on top.
