Have you ever wondered what to serve with a great pork fillet recipe? If so, you're not on your own. I'll share some tips on picking a side dish, together with a couple recipes to go with a pork fillet. Initially I need to know which pork recipe to make. When I have established that, then I have a few other elements to contemplate.
Once I've chosen the entr?e, I then need to bear in mind flavors that might compliment it. For instance, basic fruits such as apple, cranberry, and orange are delicious with pork. Mustards and mayonnaise are condiments that go nicely with pork, whilst adding moisture. With the many herbs to choose from, sage, rosemary, nutmeg, and thyme are in the forefront as being complimentary with pork. As far as vegetables, most anything goes, but my personal favorite with pork is sauerkraut. In fact, my mouth is watering at the moment just thinking about it.
In addition to flavor, I also take into consideration the texture and weight of the pork fillet when choosing my sides. If I'm serving a heavy stuffed fillet full of abundant flavor and texture, I'll go for a lighter side, such as steamed broccoli along with a tossed salad. Alternatively, if I have prepared a lighter fillet, with simple seasoning, then it could handle a more substantial side such as a cranberry-strawberry jello (recipe below), a hearty sweet potato casserole, or a yummy Waldorf salad, with apples, dates, celery and a mayonnaise foundation (recipe below).
The cardinal rule for me on sides is that I want them to compliment the entr?e, not compete with it in both flavor and texture.

Cranberry-Strawberry Jello Salad
6 oz pk strawberry jello
1 C boiling water
16 oz canned jellied cranberry sauce
16 oz crushed pineapple, UNDRAINED
10 oz frozen strawberries (thawed)
In a large bowl, dissolve the jello in boiling water. Next, blend in cranberry sauce, pineapple, and strawberries with their juices.
Chill no less than an hour, or until firm.
This fruit salad is full of flavor, so I usually serve it with pork fillets baked with a light seasoning.
Waldorf Salad
3 apples cut into chunks
4-5 dates cut into little pieces
? C celery, chopped
? C walnuts, chopped
? C mayonnaise
Sugar, about 2 tsp
Mix all the ingredients, shortly before serving so the apples don't turn brown.
This is also served well with a lighter pork fillet recipe, due to its dense texture.
