When you think of Marlin you may think of sporting fish, the city in Texas, or you may think of the clownfish in Finding Nemo who is searching for his son. I am of course referring to the former, and it is this sporting fish that has gained so much popularity, not just through the sport of catching them, but they are appearing in more and more recipes due to their delicious taste.
Marlin is primarily a fish sought after in game fishing, where fishermen who hunt them need to be highly skilled at catching them. The main reason for this is the sheer power that these fish possess. They can grow up to 900 kg in weight and approximately 3.4 meters in length, making them some of the largest fish in the world. The biggest marlin ever caught was a whopping 710 kilograms and 4.4 metres long!
Marlin can usually be found in warmer sea temperatures and they tend to migrate to the southern and northern hemispheres during the warmer months. Depending on the time of year, marlin can be found almost anywhere in the world but are usually found in the western Atlantic and Indo-Pacific oceans. There are various types of marlin; blue, black, striped, and white. Although there are a few more types, these are the most popular kinds caught by anglers across the globe.
The blue marlin is the most popular for use in cooking as it has a low fat content but is high in protein. No matter how big your appetite is, it is virtually impossible to eat a whole marlin to yourself in one go. That's why supermarkets sell them already cut into steaks for you. Usually not found in a refrigerated section in your supermarket, go the counters with the fresh produce and ask them about where it was caught etc. It is such a fascinating fish, that there is bound to be a story behind it! Even better, if you live in a town or city where fishing is a big part of the trade, local fish stores are bound to sell the best quality marlin as it will be the most fresh.
Marlin steaks taste great when grilled. Seasoning your steaks before grilling them will really bring out the flavour. Choose a marinade or food rub of your choice to accompany the marlin and then stick it on the grill for five minutes on each side. Another way of cooking your marlin is frying it. First it needs to be diced, and then thrown into a frying pan with peanut oil and seasoning; this should only take a few minutes. Baking marling in the oven is another way that crops up in several recipes.
An absolutely delicious recipe that is simple as well as delectable, is a pan-fried marlin steak soaked in sweetened soy sauce, then sprinkled with shallots. However you cook your marlin, you will be sure to enjoy it, and it goes with whatever you like as well, be it a side salad, new potatoes, or a glass of wine!
