It's just as easy as making a shamrock-shaped sugar cookie with a different type of frosting or you could just simply use some green sugar crystals for some finishing touches. First, you have to complete your ingredients for the sugar cookie and the green icing or frosting.
Sugar cookies:
5 cups of all-purpose flour
4 large eggs
1 ? cup softened butter
2 cups of white sugar
2 teaspoons of baking powder
1 teaspoon of salt
1 teaspoon of vanilla or peppermint extract
Green frosting:
3 cups of powdered sugar
? cup of softened butter
6 tablespoons of milk
? teaspoon of vanilla
? teaspoon of salt
10 drops of green food coloring
Preparation
Step 1: In a large bowl mixer, beat the butter for 30 seconds at a medium speed then add the sugar for about 3 - 4 minutes until it becomes fluffy. Beat the eggs together with the vanilla or peppermint extract in another bowl before mixing it with the butter and sugar in the large bowl. Use a separate bowl to whisk the flour, salt and baking soda before slowly mixing it with the wet ingredients using an electric mixer until smooth dough is achieved. Divide the dough in half place it in a plastic wrap and chill the dough for 2 hours or overnight until it is firm enough to be rolled.
Step 2: Roll the dough out on a thinly floured surface with ? inch thickness. Make sure to keep the dough from sticking to the counter by continuously turning the dough as you roll or by putting a little bit of flour every time you turn it. It's time to personalize your cookies by cutting it out with the shapes that you wanted or you could easily use a shamrock-shaped cookie cutter to give its shape. If you don't have a cookie cutter shaped shamrock you could easily pull it out by placing 3 dough slices with sides touching making the shape of a shamrock and cut or slice a piece as its stem.
Step 3: Slowly and gently push the sliced dough together so each leaflet is slightly curved in. Put the cookies an inch apart on the ungreased baking sheets and refrigerate the unbaked cookies for about 10 - 15 minutes to prevent these cookies from losing its shape while it's inside the oven. While waiting, you may start to preheat the oven to 400 degrees F (200 degrees C). If the cookies are not going to be frosted it's better to sprinkle some green sugar crystals on top before baking the cookies for 8 - 10 minutes until the edges are starting to show its brown color.
Step 4: Remove the cookies from the oven and let it cool first on the baking sheet for a few minutes before transferring it on a wire rack. Make sure the cookies are cooled well if it's frosted with green icing or green gel frosting before storage to keep its design and shape. Store the cookies in an airtight container at room temperature up to 3 days or inside the freezer up to 2 weeks.
