Banana Pudding
Ingredients: 2 cups of cold milk 1 package of banana flavored pudding mix 1 (8-oz) container of frozen whipped cream (thawed) 30 vanilla wafer cookies 3 bananas (sliced)
Directions: Pour the milk and banana pudding mix into a large bowl. Beat for about 2 minutes, or until it takes on a thick consistency. Gently fold in 1 1/2 cups of whipped cream. Place ten vanilla wafer cookies in the bottom of a serving bowl or dish. Top with 1/3 of the banana slices and 1/3 of the pudding mixture. Repeat the layering sequence, ending with the pudding layer on the top. Cover the pudding with the remaining whipped cream and refrigerate until time to serve.
Ice Cream Sandwiches
Ingredients: Your favorite cookies Preferred flavor of ice cream
Directions: Place a small scoop of ice cream on top of one of the cookies. Top with another cookie, pressing slightly until the ice cream meets the edge of the cookies. Store in the freezer until time to serve.
Blueberry Shortbread
Ingredients: 1 1/3 cups of sugar 3/4 cup of butter, softened 2 eggs 2 cups of sifted flour 1/2 tsp lemon rind 1 (21 ounce) can blueberry pie filling Icing: 2 cups of confectioner's sugar 2 tbsp water 1 1/2 tsp lemon juice
Directions: In a bowl, cream together the butter and sugar. Add the eggs and beat the mixture until it is light and fluffy. Add in the flour and lemon rind. Grease a 9 x 13-inch baking dish and put half of the dough in it. Cover with the blueberry pie filling. Drop the remaining dough on top and bake at 325 degrees F for about 45 minutes (or until it turns golden brown). Allow the dish to cool, then top with icing. To make the icing, combine the confectioner's sugar, water, and lemon juice. Stir until the mixture is very smooth and thick. Drizzle on top of the cooled shortbread, then serve.
Quick Apple Betty
Ingredients: 1 apple (peeled and sliced) 3 tbsp butter or margarine 1 cup of bread cubes 3 tbsp sugar 1/4 tsp ground cinnamon
Directions: In a skillet, sauté the apple slices in butter over a medium heat for about three minutes (or until tender). Add in the bread cubes. Sprinkle with cinnamon and sugar and mix well. Sauté until the bread is warmed through, then serve.
Easy Strawberry Shortcake
Ingredients: 68 vanilla wafers, divided 3 cups of sliced strawberries, divided 3 cups of cold milk 2 (4 serving size) packages of cheesecake-flavored instant pudding 1 (8 oz) tub of frozen strawberry-flavored whipped topping (thawed)
Directions: Cover the bottom of a serving bowl or dish with 24 vanilla wafers. Cover with 1 cup of the strawberry slices, then set aside. In a bowl, combine the milk and pudding mixes. Beat for about two minutes, or until the pudding has thickened. Spoon half of the pudding mixture over the layer of strawberries, then add 1 cup of whipped topping. Add another layer of 24 wafers, 1 cup of strawberries, the remaining pudding mixture, and 1 cup of the whipped topping. Refrigerate for at least 2 hours. Arrange 8 wafers and 8 strawberry slices around the edge of the bowl, then place 12 wafers, 1/2 a cup of the remaining strawberry slices, and the remaining whipped cream on top. Garnish with the remaining strawberry slices.
