There are so many varieties of white wine out there that it can be difficult to know where to begin if you are looking for one to compliment a specific dish. Inevitably choice is going to come down to personal taste and as an avid viewer of cookery channels I've seen top chefs disagree vehemently with a wine expert's choices so maybe we should just enjoy whatever we like.

Tonight I'm having pan-fried salmon fillets served with tomatoes roasted inside red peppers with anchovies, garlic and olive oil and am trying a Sicilian Pinot Grigio/Sauvignon blanc - I'll let you know if I chose wisely!
