When you are planning a camping trip, just because you are going to be roughing it, doesn't mean that you have to do the same as far as food is concerned. You can choose to prepare food that is elaborate or simple, the choice is yours. The key to great camp food is planning! You will need to know how many meals you will need, how much storage space you will have and of course, what type of cooking heat you will be using. After you have figured all of that out, the only limit is your imagination!
One suggestion I have is to consider cooking a few meals before you leave on your camping trip. A great example is taco-seasoned meat which can be brought along for a "make your own" taco meal which your whole family will enjoy. Casseroles are another complete meal that can be prepared ahead of time; like all frozen foods, casseroles can be used in the cooler to keep other food items cold and will thaw out in time for meals.
Soups can be heated up quickly in the original can or in a sturdy pot over the campfire. Make sure that you remove all labels from any cans before you heat up the contents. Other canned items such as chili, tuna and salmon are also easy to store and prepare, just don't forget a manual can-opener. If you are going to do a lot of hiking, dehydrated and freeze-dried food items and complete meals are a great way to cut back on the weight for the backpacks.
Unless you enjoy camping in extreme weather conditions, avoid bringing any food items that require refrigeration. As far as frozen meats are concerned, the meat will be safe left out for the first night as long as it is frozen solid, wrapped in tin foil and tucked into towels or clothing to preserve the cold. Do not forget that protein is important when camping, especially if your family is active. Food items such as canned or dried beans, nuts, peanut butter, tuna and canned chicken are some excellent options.
For many people bread is considered to be a staple with a variety of meals. I suggest that you pick bread that has a crisper crust as this will help alleviate any potential damage that may occur during transportation. For recipes that require milk, dried milk is an excellent substitution and is typically packaged in a box. Another excellent type of camp food are potatoes and certain types of vegetables which are versatile and satisfying.
