Another name for common beans is red kidney beans. These beans are also very nutritious just like is the case with other types of beans. Their rich fiber content is notable as it stabilizes the blood sugar levels of diabetics from an all time high to manageable levels. Apart from the high fiber content, these beans are also rich in manganese and protein which are all essential minerals. Other important minerals that are found in these beans include selenium, calcium, vitamin B6, potassium, thiamine, starch, folic acid and iron. Most beans are hard grains which require some soaking in water before they can be prepared further. Red kidney beans have a dangerous compound known as lectin phytohaemagglutinin which is also found in other bean types although it is more concentrated in the red beans and which is subdued by soaking the beans in water as well as softening them further before coking them. This compound- lectin can cause gastric upsets of serious proportions in cases where the beans are not soaked. Avoid the use of a Crockpot as it does not have the necessary temperature thresholds to kill of the lectin phytohaemagglutinin. Remember this tip always when dealing with recipes that have red kidney beans among their ingredients. Beans are an important part of the human diet although they shouldn't be consumed in large quantities as they have been found to contain purines. These substances have been identified as being behind kidney stones, gout and high levels of uric acid when consumed excessively.

For a successful dish of some slow cooked herbed red kidney beans, here's what you will need ? cup chopped green onions, 3 cups of ready white rice, 1 cup of red kidney beans that have been in water for an hour, 10 pieces of chorizo sliced thinly, 1 green bell pepper sliced, 2 white onions that have been peeled and sliced, 3 cups of water, 1 teaspoon paprika, 1 teaspoon ground pepper, 1 teaspoon of salt, 6 garlic cloves peeled and chopped, 2 crushed bay leaves, ? cup celery, 1 teaspoon of dried thyme.

Put all the ingredients that you have into a slow cooking pot apart from the rice and the green onions. Cover the cooking pot and set it on high setting for roughly 4 hours. Once the four hours lapse, the cooker should be set into a low setting and the beans cooked for another hour or so. The beans can be served and topped with the green onions with white rice.
