in tasty additions (herbs, saut?ed greens, poached seafood) and grated parmesan cheese and/or butter. Serve right away.

Paella: Saut? great smelling vegetables and meat in a large shallow pan. Add rice and seasoning and stir until aromatic. Put water, bring to a simmer, cover and
simmer till rice is barely tender. Add sea food and any extra veggies, cover and cook until the sea food is firm and also the rice forms a light crust across
the bottom of the pan.
