Ingredients for the Cake:

. 6 large-sized egg yolks
. 2 tsp. pure vanilla extract
. 1 ? c. granulated white sugar
. 3 c. sifted cake flour
. 1 tbsp. and 1 tsp. baking powder
. 12 tbsp. unsalted butter (set at room temperature, cut to pieces)
. ? tsp. salt
Ingredients for the Chocolate Frosting:
. ? c. cocoa powder (either unsweetened cocoa powder or Dutch-processed)
. 8 oz.semisweet or bittersweet chocolate (chopped)
. ? c. milk
. 3 c. confectioners sugar (icing or powdered, sifted for lump removal)
. 1 ? tsp. pure vanilla extract
Steps for the Cake:
1. Preheat oven to 350 deg F. Spray Bakers Joy to two 9" x 1 1/2" cake pans. Line the bottom part with parchment paper. Spray with Bakers Joy again. Set aside.
2. Using a medium bowl, lightly mix the ? c. milk, egg yolks and the vanilla extract.
3. Combine the dry ingredients in the bowl of the electric mixer. Mix the ingredients on low speed for 30 secs. or until the mixture is well blended. Add the butter as well as the remaining ? c. milk. Again, mix the dry ingredients on low speed until they moisten. Increase the speed of the mixer to medium. Beat for about 2 mins. to aerate and to develop the structure of the cake.
4. Scrape the bowl's down side. Add the egg mixture gradually or in three additions. Beat for about 30 secs. after every addition so as to incorporate the egg.
5. Divide the batter. Pour the mixture into the prepared pans. Use an offset spatula to smoothen the surface. Bake the mixture for about 25 - 35 mins. or until the toothpick comes out clean.
6. Put the cake on a wire rack for cooling for about 10 mins. Invert the cakes on the greased rack. Re-invert the cakes in a way that the tops are "right side up" to prevent splitting. Allow complete cooling before frosting.
Steps for the chocolate Frosting:
1. Put a stainless steel bowl over a saucepan with simmering water. Add the cocoa powder, chopped chocolate, butter and milk.
2. Stir the mixture until the chocolate melts and it becomes smooth. Take it out from the heat. Add the vanilla extract and confectioners sugar and beat using a wire whisk or hand mixer. If you see the frosting a bit lumpy, remove any lumps using a strainer. Cover and then put the frosting in the fridge until it becomes firm. When the frosting becomes firm, remove it from the fridge. Put the frosting in your mixing bowl. Then beat the frosting for about 1 to 2 minutes or until it is already nice and smooth enough for spreading.
